There was an interesting challenge around it on AIcrowd last year.
It was called 'Learning to Smell' and hosted by popular swiss fragrance and flavour business Firmenich. It contains publicly available dataset, baselines, winner codebases, etc., to play around with.
I like the explanation and seems fair trade off to me for complying with laws. Meanwhile, I think Zoom sucks big time with their PR team unlike Google, Microsoft, due to which they are being pushed again and again on privacy issues.
Yup, I have gone through this. If you aren't confident with your skills you can look up to softwares like VestaCP [1] to setup everything for you. You can also use more advanced solutions like FreedomBox [2].
The pain is worth it!
Another fun tip: Enable catch all for your emails and then provide different email for each purposes, like this website can have email [email protected] and so on. I love to regularly see which website fucked up handling my email id and I just silently block that email in a click (and hence, much less spams).
This was possible since long (2013) but Google decided to keep it "banned" via policy which stated:

I think you are mistaken.
Majority of the emails are on government server: https://email.gov.in/
They used to be on 3rd party provider till a few years back (but still never on Gmail).
