Adjusting prices according to local purchasing power is a reality in the business. Amazon prime, Netflix, iCloud are the first ones coming in to my mind.

yet I see in the discussions that we should make flying more expensive. Trains are not really competing with airplanes, but personal cars!
Yes there are plenty of start-ups doing this. You can also use AWS's build-in functionality to achieve this. You can write a Lambda function which checks your server status. Even better which calls your end-point for health check if you want more detailed monitoring
It is not an evil thing to have "google search by default" and fund this browser with the money from google. Because people don't want to pay for it. Firefox doesn't stop you from changing the default search engine easily.
It does not need to read the body of email in order to work. It can index just the header(to, date, subject) or you can use a program on your computer locally to keep your emails and index&search them.
