Rather than re-invent the wheel here, I suggest as starting points, the "awesome (anything)" lists at GitHub, and something like the Wikipedia page https://en.wikipedia.org/wiki/List_of_free_and_open-source_s... List of free and open-source software packages. A quick scan tells me that none of these are of low quality.
And they're categorized, so you might focus your requests on certain areas (an extension of the OP) in order to get some ground truth.

check out the "awesome-selfhosted" list. It's pretty exhaustive and not very well curated, but it's a good starting point when you're looking for something

InvoiceNinja is also another billing option if you are looking for Stripe Billing like functionality without being beholden to Stripe, they have solid APIs, tons of processors integrated besides Stripe , and the devs are very responsive and helpful on their forum.
