Emoji code points (including the pile of poo) have actually been in Unicode since 6.0, but now they've added colored "emoji style" variants for the characters. Previously the standard only defined black and white "text style" glyphs.

Yes, you can enter the Emoji through the "Special Character…" item in the Edit menu. Lion even speaks Emoji:

I just tried this, sending from Verbs (iOS 5 supports emoji since forever), and yes, I can see the 😘❤😊🍸💚💤❕💙😰😥😭🏠❔💗👿👽💩🎵💦🐱🐶🐭🐹🐰🐺🐗🐮🐷🐻🐨🐯🐸🐵🐒🐴🐎🐫🐑🐘 with no problem whatsoever :-)

The font Symbola already has the PILE OF POO glyph, in addition to a number of glyphs for ancient scripts.
