unlike Evernote which is spammy and buggy and painful to use.

Tried them all. It is critical to me that the app is subscription-free, runs on mobile, desktop and web.
I ended up using the native iOS/macOS notes app. Many features are lacking, I can only sync via iCloud, but the app syncs very well, has a decent UI and can handle attachments very well.

On macOS, I've used Microsoft OneNote and the defunct Circus Ponies NoteBook. But this has been my daily driver for many years:

Years ago Growly Notes was a paid app (and I paid!), but these days it is an absolutely free download, and the developer support has been awesome.
My only regret is that it is desktop macOS only.

Since the free app is fully featured, I see the $8 as the paid version, as opposed to just for sync. But I think they're doing themselves a disservice listing it like this. I use Syncthing to sync my obsidian note 'vault', and by having my Mac's Syncthing directory in iCloud, it also syncs notes to my iPhone. This gives you a free◊, cross-platform markdown notes solution. Oh and since Syncthing has a Synology NAS package, I also sync my notes to a NAS.

Index cards are pretty good. They are thin enough to fit in my wallet which keeps my memory available long enough to use it.
I use OneNote, but that is under the Office365 suite of products (which is quite costly)
Spammy? I haver been using Evernote for many years and it doesn't spam me.
