I think a simple experiment is enough to understand why one would have some concern with a state-censored AI model : Just try asking them about atrocities committed by their state[1].
This is also what pushed me to get a PS3 later in its lifetime : getting a game console, CD player and DVD + Blu-Ray player all in one box was pretty convenient.

Standard Notes has a free tier with end-to-end encryption, offline notes access, 2FA and password protected notes. Best part for me is the ability to use a custom editor instead of the default ones.
