If your webcam is on and is in use as part of the call and you have positioned it in such a way that they can see what you type on your keyboard. Then yes otherwise no.
Do you see it on your screen? If so, and you are sharing that screen then most likely yes, otherwise no.
On iOS it depends. For example, if you are typing in a password-tagged field a screen recording will not display the content+keyboard. I would assume screen sharing follow the same behavior. So basically, it depends..
Well, when I'm in a call the call widget is usually the first to show up after I have unlocked the screen. I am not sharing the screen explicitly through any app.

Bonus question: what if I need to open my password manager or input a pin into another app (authentication or otherwise requesting pin) that is not affiliated with the company I am calling?
I'm mainly interested how it works on android but my curiosity wouldn't mind if someone has insights into other platforms as well..
